Spinach Acai Bowl

Ingredients

  • 1 frozen banana
  • 1 cup packed spinach leaves
  • 1 tablespoon BerryBoost Powders acai powder
  • 3 tablespoons coconut cream
  • 1/3 cup coconut milk beverage

 

Directions

Combine all ingredients in a blender and blend until smooth and creamy

Goji cucumber mule

Ingredients

  • 2 Oz Goji Berry Infused Organic Vodka (*recipe follows)
  • 3 Oz Fresh Cucumber Juice
  • 2 Oz Ginger Beer

*Goji Infused Vodka
3 Oz  BerryBoost Powders goji powder
3½ Cups Vodka

 

Directions

Goji Berry Vodka
Place the goji berry powder in a container and add vodka. Infuse for 3 to 5 days. Shake or stir the jar of fruit and vodka daily.

Cocktail
Pour goji vodka, cucumber juice and ginger beer over ice and garnish with sliced cucumbers and goji berries.

Acai Smoothie Bowls

Ingredients

  • 1/2 cup milk of choice
  • 1/2 cup canned coconut milk or more milk of choice
  • 1/4 tsp pure vanilla extract
  • tiny pinch salt (to bring out the sweetness)
  • 1 overripe frozen banana OR 3/4 cup Thai coconut meat
  • 1 tbsp BerryBoost Powders acai powder
  • sweetener of choice, as desired

Directions

Blend all ingredients together until smooth. Pour into a bowl and top with your favorite granola, shredded coconut, and/or fresh berries. **Note: The acai bowls will be much richer if you opt for the canned coconut milk, but lower in fat and calories if you use 1 cup milk of choice (such as almond milk), so choose whichever option best fits your dietary needs. Feel free to double or triple the recipe for multiple servings.
